If there’s one thing we can say for sure about Copenhagen, it’s that there will always be great places to eat and drink. Hot spots come and go, but Copenhagen’s food scene is (hopefully) forever. Or at least, for a good long time.
Much of the news this year has revolved around the upcoming evolution of Noma from fine dining New Nordic restaurant to Noma Projects, pop-ups, and e-commerce. Amass’s closure, along with this change for Noma, is a sign that the winds of change are here. So what’s new in Copenhagen? Luckily, a lot. While there are certainly new fine dining spots, there are also a plethora of more casual places that are internationally-inspired. We love to see it!

New Restaurants in Copenhagen
Villette
Martin Ho and Jesper Emil Norrie, owners of beloved Nørrebro spots Pompette and Poulette, are opening Villette, a fresh, seasonal eatery with American chef Marissa Lippert. Will there be natural wine? Of course!
The restaurant opens on 1st February for reservations. If Pompette and Poulette are anything to go by, Villette’s local cult status is secured.

Goldfinch
An absolute gem of a restaurant serving fresh, tasty Chinese dishes in a family-style menu. The food is ethically-sourced and the interior is a delight, taking inspiration from the classic film “In the Mood for Love.”
Hot tip: you don’t need a reservation for their cocktail bar, which is at the front of the restaurant, and they also serve their full menu there! Ideal if you feel like a meal on your own or with one other person.

STUD!O
STUD!O finds its third iteration, after its run at The Standard (RIP), then as a pop-up, with head chef Christoffer Sørensen still at the helm.
Located in a totally renovated, sleek space in Carlsberg Byen, STUD!O focuses on seasonal, New Nordic-style tasting menus with excellent wine pairings.
The flavors are fresh and assured; this is definitely fine dining in the most Copenhagen sense of the word. Sørensen is actually trained in chocolate, so don’t miss the chocolates at the end of the meal: what a treat!

JUJU
Opened at the end of July 2022, JUJU is the little sister restaurant to Koan. A casual Korean eatery, JUJU is the brainchild of chef Kristian Baumann, formerly of noma and 108. The menu is a swirl of delicious comfort food, including fried chicken, mandoo noodles, and sesame rice.

From the team behind Polly, Frank, and Bistro Grimal comes June, a restaurant with a four or nine serving menu, plus an extensive wine and cocktail list. The food is seasonal, fresh, with a focus on local ingredients and interesting flavor combinations that straddle between Nordic and Japanese influence.

SAJI
This is an exciting one – SAJI is an Indonesian restaurant with a rotating menu of traditional, gorgeously-prepared dishes. Owners Samuel and Jimmy are both from Sumatera, and met at culinary school over a decade ago. They were surprised to meet each other again in Copenhagen, and this restaurant is the fulfilment of a major shared goal.
“Saji” means to present or serve, and the emphasis here is on food as a way of welcoming guests.

Gaijin
Gaijin means “outsider” in Japanese, and the idea behind this informal Japanese-inspired eatery is to draw on that otherness in order to experiment with flavors and methods. Hot tip: sit at the counter (it seats up to six people) for the chef’s seasonal menu and a really personal experience. If you reserve a table, you can order either the menu or a la carte dishes.

New Casual Dining and Takeaway in Copenhagen
Diamond Slice
After a successful pop-up in bagel shop Depanneur, NYC-inspired Diamond Slice has opened their own shop on Blågårds Plads, Nørrebro. You can eat-in or take away their enormous slices with great toppings like hot honey or whipped ricotta. Is this truly NYC-style pizza? No – in the grand tradition of Copenhagen restaurants, it’s international inspiration with a Copenhagen twist. Not to mention that they close at a reasonable hour, which automatically takes them out of the running for an authentic New York slice.
But the pizza is really tasty and the slices are big (two slices are enough for a full meal). Throw on some pepper flakes, fold ’em up, and enjoy!

Wild Horses
There are never enough really good casual eateries, right? Wild Horses comes along in this grand tradition, and we’re pleased to see them in Sydhavn, making for a great neighborhood spot.

Another new spot in Carlsberg Byen – the neighborhood is really popping these days – Beyla (formerly called Souls) is a vegan cafe that’s part of the ARK Collection, which boasts ARK and Bistro Lupa, all vegan restaurants that elevate and refine what’s possible with plant-based eating and drinking.

Juli Pizzeria
Does Nørrebro need another casual pizzeria? Juli makes the case for yes! Inventive and delicious toppings, soft crust, and tasty crust dips make Juli a spot worth trying.
There are a few seats if you feel like a quick meal, but it’s really a takeaway joint. Be warned: these pizzas are a little bit smaller than the usual personal pizza in Copenhagen, so we recommend ordering a few and sharing (although one is certainly a fair sized meal as well).

Bar Poldo
If you’re a fan of the casual, cosy style of a Spanish bar – good drinks, good bites, lots of people enjoying themselves in a small space – you’ll love Bar Poldo. Even though it’s in a very central, busy, and quite touristy area, it’s a tiny little jewel box of a place that really has a local feel. There’s very limited seating, including bar seating (recommended!). Enjoy small plates of food like arancini and oysters, as well as natural wines and cocktails. This is a great after work/before dinner type of spot for a quick, enjoyable drink.
